Kevin D. Ellis Named General Manager of Hyatt Regency Monterey Hotel & Spa

The Hyatt Regency Monterey Hotel & Spa has announced the hiring of Kevin D. Ellis as its new General Manager.

Monterey, CA, December 19, 2018 — The Hyatt Regency Monterey Hotel & Spa has announced the hiring of Kevin D. Ellis as its new General Manager.

Ellis joined the Hyatt Monterey team as Director of Operations in July 2015, then promoted to Hotel Manager in November 2017, before being named General Manager.

Ellis has had a long tenure with Hyatt Hotels, spanning over 18 years and eight different Hyatt properties across the United States and Canada.

Pacific Hotel Management, LLC, has announced the appointment of Sebastian Stacey as General Manager and Chef Pierre Arce as Executive Chef at its newest property, The Clement Palo Alto, scheduled to open in Fall 2015.

Palo Alto, CA, July 16, 2015 — Pacific Hotel Management, LLC, has announced the appointment of Sebastian Stacey as General Manager and Chef Pierre Arce as Executive Chef at its newest property, The Clement Palo Alto, scheduled to open in Fall 2015.

Stacey has more than a decade of experience in all aspects of hotel operations and management, with a strong focus in associate development and training. He previously served as Front Office Manager at the Historic Casa Munras Hotel and the InterContinental The Clement Monterey, both in Monterey, CA.

Born in France and trained in Europe, Chef Arce is also Executive Chef of the Sheraton and Westin hotels and has been at the culinary helm in Palo Alto for more than two decades.

The award-winning chef’s style is rooted in his classic culinary training, but he feels it is important to place a strong emphasis on the finest local ingredients with a light touch.

Chef Arce will also be in charge of the banquet kitchen for all three properties.
